I typically order takeout when I want Thai food, but I decided to try my hand at a homemade Thai recipe the other night. I have always loved Thai Chicken Basil, and I thought this would be a creative way to use the basil leaves from my herb garden.
I love the way this recipe turned out, and it had a significant amount of heat from the Serrano peppers. If you can’t handle spicy food, I’d recommend using less Serrano peppers or omitting them completely.
As always, I included my wine pairing suggestions, so take a look if you’re wanting to pair this recipe with something nice. Cheers!
Thai Chicken Basil
Ingredients
- 1 pound skinless, boneless chicken thighs, coarsely chopped
- ⅓ cup chicken broth
- 1 T oyster sauce
- 2 T soy sauce
- 1 T fish sauce
- 1 T white sugar
- 1 T brown sugar
- 2 T vegetable oil
- 3 T corn starch
- ¼ cup shallots, sliced
- 4 cloves garlic, minced
- 3 Thai chiles or Serrano peppers, diced
- 1 cup basil leaves, thinly sliced
- 2 cups basmati rice, cooked according to package instructions
Instructions
- Whisk together the chicken broth, oyster sauce, fish sauce, soy sauce, white sugar and brown sugar until well blended.
- Heat large skillet over high heat. Drizzle in vegetable oil. Add chicken and stir fry until it loses its raw color, 2 to 3 minutes.
- Stir in shallots, garlic, and sliced chilies. Continue cooking on high heat about 2 or 3 more minutes.
- Add about a tablespoon of the sauce mixture to the skillet; cook and stir until sauce begins to caramelize, about 1 minute.
- Pour in the rest of the sauce and add the corn starch.
- Cook and stir until the sauce starts to thicken. Continue to cook until sauce glazes onto the meat, 1 or 2 more minutes. Remove from heat.
- Stir in basil. Cook and stir until basil is wilted, about 20 seconds. Serve with rice.

Wine Pairings Recommendations
I usually like to pair Thai food with a Riesling, but you could pick another white wine like Grüner Veltliner or Sancerre. All of these wines listed below are dry wines and are very crisp and clean. The fruit notes on these wines will compliment this dish well.
- Clarevale Clare Valley Riesling // $13.99
- Trimbach Riesling // $18.49
- Gruber Roschitz Gruner Veltliner // $14.99
- Romana Sancerre Blanc // $26.99
