I am always on the hunt for a good snack to tie me over between meals. I tend to eat really lite for breakfast and lunch, so I find myself snacking throughout the day. So many things I choose to snack on don’t really fill me up, though.
I had seen a few recipes on Pinterest for these “No Bake Energy Bites,” but I didn’t think I would really like them since I am not big on peanut butter. I was totally wrong! I tried these for the first time a few months ago and they are incredible and super filling.
I made them again this week to have as a snack, so I thought I would share the recipe I use.
No Bake Energy Bites
Ingredients
- ½ cup dark chocolate chips
- 1 cup dry oatmeal
- ½ cup peanut butter
- ½ cup ground flaxseed
- ⅓ cup honey
- 2 T chia seeds
- 1 tsp vanilla extract
Instructions
- Mix all ingredients together thoroughly.
- Place in the refrigerator and chill for 1 hour.
- Once chilled, form the "dough" into balls (about 1 inch in thickness).
- Place back in refrigerator once all balls are formed. Store in refrigerator for up to 1 week.
This is so easy and takes no time at all. The best part is that these are ingredients you probably already have on-hand at home!
