It is that time of the year when everyone is probably eating more fish, especially on Fridays! Maybe you just go out to eat or go to your local fish fry, but I wanted to share a few lent-approved recipes if you want to stay home and cook.
Alex and I actually eat seafood 4-5 nights out of the week, so I have quite a few meal ideas and recipes to share. I love everything from salmon to shrimp to sea bass!
Here are a few recipes that are simple and extremely tasty:
Another meal we do pretty regularly is just a piece of salmon with some veggies on the side. We put a little lemon, butter and dill on the salmon for a seasoning and pop it in the oven for about 20 minutes at 375 degrees. It is so good!
If we get sick of salmon, we do cod instead. We season the cod really well and cook it in a hot pan with olive oil for about 5 minutes.
One more idea for you if you are craving Mexican – you can do shrimp fajitas with some guacamole! If you need a good guacamole recipe, check out my blog post with my famous guacamole recipe.
Another recipe I did during Whole30, was sweet potato bites with guacamole and shrimp on top! I cut up a sweet potato into thin slices, baked it in the oven and then topped it with guacamole and shrimp. This was so tasty, and it looks really pretty. This could be a really great appetizer for a party.
What are some of your go-to Lent meals? I am always looking for new recipes to try!
Hope everyone has a great weekend! Cheers!
